Rack of Lamb, with Lemon Butter Green Beans and Hasselback Potatoes

Happy Valentines Day.  My wife and I decided to stay in tonight, and cook ourselves a really nice gourmet meal.  It’s a little complicated but I’m sure we will get through.  NOTE: We are doing 3 dishes here, so read through first so you can plan accordingly.  I’ll let you know tomorrow (Feb15th) how it went.

Simple Margaretta Pizza

The Margaretta Pizza; it’s lite, sorta healthy (for pizza anyway) and a breeze to make.  Always keep in mind that the nice thing about being your own chef is, you get to pick a choose how much of each ingredient you use, and it’s fun to create.  Being a decision maker is nice (not that I would know).

Fettucine Alfredo, ala Olive garden

You will never want to spend the $10-$12 they charge once you see how easy it is to prepare.

Super easy Quesadillas

This one is so easy it almost does not seem fair.  Very easy, very little cooking, very little prep.  This is a perfect dish for the super busy, the college kid, the “I can’t cook, lets go spend money to eat crap,” kinda people.   We were sitting and eating a warm meal within 20 mins of opening the fridge.  […]

Food: Bleu Cheese Burgers

1 pound ground beef
salt and pepper
1 tsp Worcestershire sauce
4 Tbs blue cheese, more or less
1/4 cup red wine

Mix together the beef, salt, pepper, and Worcestershire sauce. Form patties and tuck the blue cheese into the middle, surrounded by ground beef.  You want to make a little indentation for the cheese.  […]

Food: Easy Gourmet

Tonight was a great night at the dinner table.  Some nice wine, great conversation, and the food was exquisite.  My wife took her first bite and proclaimed, “this is like something you could order in a swanky restaurant.”  I agreed.  This recipe takes a little longer than normal, about an hour.  But it was Saturday […]

Food: Creative leftovers in the midst of a long week

Dread filled me as I slowly walked to the fridge.  This week has been one long arduous task after another.  I’m building this page, my daughter isn’t feeling well, it has snowed multiple times (my wife won’t let me buy a snow-blower) and the thought of constructing a well balanced, great tasting meal was daunting at […]
