Food: Creative leftovers in the midst of a long week

Dread filled me as I slowly walked to the fridge. This week has been one long arduous task after another. I’m building this page, my daughter isn’t feeling well, it has snowed multiple times (my wife won’t let me buy a snow-blower) and the thought of constructing a well balanced, great tasting meal was daunting at best. I opened the fridge and WAZAAM inspiration struck as I peered at a shelf leftovers.
Lets call this recipe, “Hay-Stacks” serves 2
1/2 bag tortilla chips (Doritos will work fine)
1/2 to 1lb of chili (ground beef or turkey are fine)
1 can black beans (drained)
3/4 cup diced onions
1 tomato diced (drain if canned)
1 1/2 cup shredded lettuce
1/2 cup olives
1/4 cup jalapenos (don’t be wimpy, you can handle ‘em)
2 cups shredded cheese (mozza’ is best but choose what you like)
Salsa
Hot sauce ( I like Franks)
Reheat your chili or brown your beef. Take about a handful of tortilla chips and crush them on a good sized plate. Add a big spoon of chili to the top of the crushed chips. I like to add the cheese now (my wife puts her’s on last) so it melts a bit. Then add a scoop of beans. Handful of onions, tomatoes, olives, and jalapenos. Put a large handful of the lettuce on top, then poor the salsa over the “hay-stack”. Add hot sauce as desired for flavour. Some toss their haystacks, I just spoon heaping mounds of delicious goodness into my mouth.
I got the recipe from my mother in-law, she is a fantastic cook and has taught my wife well. I encourage you to try it, its simple, it tastes great, and its not bad for you. To make it lower in fat, get lite chips and omit the cheese. Enjoy.
