Simple Margaretta Pizza

The Margaretta Pizza; it’s lite, sorta healthy (for pizza anyway) and a breeze to make.  Always keep in mind that the nice thing about being your own chef is, you get to pick a choose how much of each ingredient you use, and it’s fun to create.  Being a decision maker is nice (not that I would know).   

REMEMBER: Get you pizza stone in the oven at 500, for approx 1 hour.  

2 tablespoons extra virgin olive oil
1/2 lb. plum (Roma) tomatoes, chopped in 1/2″ pieces
1 clove garlic, crushed and finely chopped
1/2 tsp. salt
1 12″ uncooked NY Style dough crust (you can buy raw dough from most grocery stores, or you local pizzarea)                     6 fresh basil leaves cut into julienne strips
extra virgin olive oil
1/4 cup fresh shredded Parmesan cheese

Combine 2 Tbls. olive oil, tomatoes, garlic, and salt in bowl.
Allow to marinate while making dough.
Brush dough crust lightly with olive oil. Top with cheese, then
tomatoes. Drizzle with olive oil. Bake in preheated 500F oven on
pizza stone for 8?10 minutes or until crust is golden brown and cheese
is bubbly. Remove from oven and top with Parmesan cheese, then basil.
Cool on a wire rack for 2?3 minutes before cutting into wedges.

There you have it; not so bad huh?  My wife and I like to make pizza when we’re entertaining friends, (not family, they don’t go for that) because it’s easy, inexpensive and when people hear home-made gourmet pizza, they get all excited (kinda weird how excited at times).

  2. sounds good. Roger Clemens nickname should be changed from “the Rocket” to the “Texas Con-Man”. doesn’t have anything to do with movie books or food but just throwing it out there.
